Italian Wedding Soup
I got this recipe from a fellow volleyball Mom! Delicious, quick and warm on a cold night. Technically, you don’t need to add anything at all to the meatballs, just roll small balls of meat. I like to add a few little things and you can add whatever you like to your meatballs, get creative, make sure you write it down, because if you like it, you will want to do it again! ENJOY :)!
Soup:
- 6 c water
- 5 large chicken bouillon cubes (to taste)
- 1 c Acini De Pepe; uncooked
- 1 pckg Spinach; chopped
Meatballs:
- 1.5 lbs hamburger; lean (85%)
- 3/4 tsp basil
- 3/4 tsp pepper
- 3/4 tsp celery salt
- 1 egg
- 1 small onion grated
- 1/2 c parmesan cheese grated
Boil water and dissolve bouillon. Mix and ball meat while water is heating up. Take hamburger and add basil, pepper, celery salt, egg, grated onion and parmesan cheese. Mix it well. Form small meatballs, 1/4-1/2″, the smaller the better, and drop them into the warm broth. Reduce heat to medium, once broth starts to boil. Make all the meatballs, add chopped spinach (almost a whole bag and about 1 cup of Acini De Pepe, right before you are ready to eat!
