Spicy Chicken with Guacamole
Tonight we are making a spicy chicken breast with an avocado salsa dressing. It’s a little spicy, and if you don’t like the heat, add a little less cayenne pepper, or a little more, if you like it super hot!
Ingredients:
- Bacon (about 8 slices – I use scissors to cut the bacon into little strips)
- 2 chicken breasts – sliced 1/2″ thick
- Kosher Salt
- Cayenne Pepper
- Black or White pepper (I have a combination that I like to use)
- Onion Powder
- Garlic Powder
- Avocado’s x2
- Large Red Onion – 1/2
- Garlic – 2 cloves
- Juice of 1 lime
- 1 Plum tomato
Mix together the following spices for the chicken rub:
- 1/4 tsp kosher salt
- 1/2 tsp cayenne pepper
- 1/2 tsp pepper (black and/or white)
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
Slice up chicken breasts, so you have 1/2 ” thick slices. Rub the chicken with the spices, wrap in plastic wrap and let them rest in the refrigerator.
While they are resting, cook up some bacon bits. We use thick cut bacon. I usually cook up half or the entire package, this way, we can use fresh bacon bits later in other meals. While bacon is cooking, make up the avocado salsa.

When bacon is done, leave the grease in the pan and set the bacon aside.
Use the bacon grease to cook your chicken breast, or for a healthier flare, cook the chicken breast on the grill.
When the chicken is completely cooked to 165 degrees internal, remove from stove/grill. Let chicken rest for 5 minutes. Place a slice of chicken on your plate, top with crumbled bacon bits and place a heaping spoon of avocado salsa on the side, serve immediately and ENJOY!
