Guacamole

I’ve been asked a couple of times for this, so figured it was about time to put it on the website!  I usually make it for 2-4 people, if you are feeding more, please double the recipe.

  • 2 avocado, ripe
  • 2 plum tomatoes
  • 3 cloves of garlic, depending on size and your taste buds
  • pinch of cayenne pepper, if you like it a little spicy
  • pinch of salt
  • 1 large red onion slice 1/4″ thick, chopped fine
  • 1/2 lime juice, squeezed

Chop the avocado, I prefer it chopped over mashed. Add garlic to taste, i chop mine, instead of mincing it.  Cut the plum tomato into small bits, sprinkle some cayenne pepper on top, pinch of salt, add chopped red onion and stir well.  Squeeze 1/2 lime over the top and gently mix in.  Let it set for a few minutes to meld all the flavors and serve.  This will last 24 hours under refrigeration and the garlic flavor will intensify with time.
