Baked Pecan French Toast

Woke up this morning and found some pecans in my pantry, so I made Baked Pecan French Toast. We thought it came out pretty good, so are sharing the recipe!  We could easily add Apples, but I would worry that they might make the french toast too wet.

Toast Batter
4 eggs
1/4 cup milk
1/2 cup orange juice
8 slices of bread
1 tsp vanilla
1/4 cup brown sugar
Filling:
1 cup pecans
1/4 c maple syrup
1/4 c brown sugar
1/4 c melted butter
1 tsp cinnamon

Lightly butter skillet.

Mix batter well

Soak each slice of bread in batter and make a single layer in the bottom of a small skillet. (You may need to tear bread to make it fit properly in pan).

Add layer of filling (lightly spread on each piece of bread).

Add another layer of bread soaked with batter and add another layer of filling.

Pour leftover egg mixture over top and bake at 425 for 30 min until fully cooked! Let set for 5 minutes before serving. Add butter, syrup or confectionery sugar and enjoy!
